Since the 1950s, between Modena and Reggio, a restaurant has been pursuing a concept of Emilian haute cuisine which finds its maximum expression in a truly original mushroom lasagna, spugnolata. Creativity, territory, family traditions, no waste cuisine enclosed in a single dish. The same that has been on the menu for more than sixty years at Arnaldo Clinica Gastronomica, the oldest Michelin restaurant in Italy.

2 liters of milk

    About to burst crying while watching this video. It's hard to describe this type of beauty. Maybe it's the mix of passion they put into their own dishes, and the feeling of happines while narrating their family traditions. There's so much humanity in here, what's more to ask?     One of the best videos this year... the calm and classy vibe lingers on for decades.. I love the anti-waste policy that results in special dish which is not too traditional, but remains faithful to its origin.. generous portion too !

    Of all the cooking shows on YouTube, Italia Squisita is number one in my book. These are truly first class restaurants, whose chefs have won their culinary spurs with the dishes they demonstrate. At the same time, they pitch this to the person cooking at home; these recipes are do-able by duffers like me. So entertainment and master-class instruction. This lasagna is a great example. I shall be trying to make it (well, something like it...) during the week upcoming. Kudos!
