CUBAN BREAD PUDDING * Pudin de Pan

Pudin de pan, Cuban bread pudding. The traditional recipe tends to be dense and custard like (similar to a flan). We decided to change things up a bit to make it more Cuban-American. The bottom is still thick and sweet while the top part resembles more of the type of American bread puddings we enjoy which take on toppings well.

We drizzled ours with a quick maple & guava glaze (thanks to Bobby Flay's recipe: www.foodnetwork.com/profiles/talent/bobby-flay) and a slab of cold cream cheese.

Fun fact: bread pudding dates back to the 11th century. Later known as the poor man's pudding, it was invented as a way to make use of leftover bread. Consumed mostly by the lower classes, it was a common dish made sweet or savory, that could be found in many countries. The dish has evolved since, now using fancier fresh breads. But, for our version, we are sticking to its original purpose and making the best of stale old bread.

Sophie walks us through the recipe step by step and, although she doesn't top it off with as much cream cheese and I'd (Gina) like, she makes one heck of an amazing dessert sure enough to impress anyone (Cuban or otherwise).

    looks really good, probably smells awesome. i wonder what it would be like with less bread, or soaking the bread for a while, and stirring it up...i'ma try this recipe but maybe cook the cream cheese in the middle? please let me know if any of these sound like bad ideas
