Quarantined and baking Cuban bread rolls! This bread has become my family's favorite lately. It takes just a few ingredients and is super easy to make.

Ingredients:
2 1/2 teaspoons active dry yeast or 1 packet 1/4 ounce
1 1/2 cups warm water
1/2 tablespoon granulated sugar
2 tablespoons olive oil
1 teaspoon salt
3 1/4 to 3 1/2 cups bread flour (may substitute by all purpose flour)
additional olive oil to grease bowl and hands

Instructions:
In a large bowl add the warm water, yeast, sugar, and olive oil. Let it sit for about 5 minutes until it gets foamy and you can smell the yeast. After 5 minutes add the flour and salt. Mix with a large wooden spoon or large spatula until well combined. The dough should be sticky. Do not be tempted to add more flour. Knead the dough with your hands in the bowl or grease your counter with a little bit of oil and knead for about 5 minutes. The dough will stay sticky but will become elastic and uniform.

Next, place the dough inside greased bowl and cover with cloth or plastic wrap. Let rise until double in size. This can take from 1 to 2 hours depending on the temperature in your kitchen. Once the dough has risen , deflate it with your hands and proceed to shape rolls of uniform size and place on lined baking sheet. Cover rolls and let rise for about 20 minutes while you preheat the oven to 400 degrees.

Bake for 20 to 25 minutes on the lower rack of your oven. These are best served warm but store well inside freezer zip lock. Leave on the counter for up to 7 days.
