  • Eating as I type this. WOW! Fluffy, light, not too sweet, firm! Saludos desde Puerto Rico! 🇵🇷 ———used your recipe and methods with some variation. Waited probably 30 minutes for the bread to soak (I used Pan Criollo) Added peanuts, raisins, lemon extract, nutmeg, cinnamon, sesame seed, banana, honey instead of sugar, 4 eggs. The syrup I did on a stovetop with brown sugar, bay leaves, rum, cinnamon sticks, lime zest, all strained—then added to the bottom of the flan container. Again, I used your methods. I really liked how you didn’t measure things exactly for the most part, just threw in the ingredients al ojo. Perfect! I pressure cooked it (1 cup and half water) for 30 minutes high pressure (normal setting) then 15 minute natural pressure release. Opened the pot. Perfectly cook, fluffy, not wet. The instant pot does it better than an oven! Can’t have enough of this. Thanks for the recipe! I’ve have a lot of budín from local panaderías but this one is best!
