In today's video I am going to be sharing my favorite simple and easy chicken noodle soup recipe. This recipe is cooked in my instant pot to make it fast but you can also cook this on the stove top as well. Give this video a thumbs up if you enjoy it, and don't forget to subscribe!

INGREDIENTS
2 tablespoons butter
1 medium onion, diced
2-3 cloves garlic, minced
1 1/2 pounds of chicken breast
6 cups low sodium chicken stock/broth
1/2 cup water
1 1/2 cup sliced carrots
3 stalks celery, diced
7 ounces egg noodles (or pasta of choice)
2 tablespoon minced fresh parsley ( I used jar because I was out of fresh)
1 tablespoon minced fresh rosemary
1 tablespoon minced fresh thyme
1 teaspoon salt
1teaspoon pepper
INSTRUCTIONS
Turn 6 quart Instant Pot to high saute function. Once hot add butter, onions, carrots, and celery. Cook until slightly softened. Add garlic and cook stirring for 30 seconds. Season with salt and pepper to taste. Press cancel to stop saute.
Add chicken breast, chicken broth, water, rosemary, thyme, bay leaves, salt, and pepper.Place lid on Instant Pot and turn to the locking position. Set the vent to sealing position. Cook on high pressure for 15 minutes. Do a quick release and be careful of the steam.
Open lid and remove the chicken. Set Instant Pot to high saute function and once boiling add egg noodles. Boil until noodles are tender. Meanwhile, take two forks and begin to shred the chicken. When the pasta is tender stir the meat into the soup. Taste for salt and pepper and season accordingly.

I’m so glad I found your recipe! My traditional stovetop soup was similar to your instructions and I was happy to find a conversion for it so I can make a good traditional soup. :) I’ve made it twice now!

Thank you so much!!! This was the best recipe for chicken noodle soup! I made this tonight for my family and they loved it. Great flavor. I tweaked mine a bit and added chicken bouillon cubes, 1 box of regular chicken stock and 1 box of low sodium stock. I also added total seasoning for more flavor. Who knew the pressure cooker was a life saver for last minute meals! :)

I am glad you are feeling better Lexy that is a good recipe that I am definitely going to try. I always enjoy homemade recipes over store bought stuff when you make things homemade it gets more care and I think that people should go back to doing that kind of stuff
