Ingredients (Serves 6 - 8 bowls depending on size):
3 lbs of fresh noodles or equivalent in dried pho noodles
For the stock:
3-4 lb whole chicken
1 Large Onion
3 ginger small ginger pieces or 1-2 very large ginger pieces
2 tbsp small rock sugar or 1 big rock sugar crystal or 1 tbsp regular white sugar
1/4 cup fish sauce, to start (more to taste)
salt to taste
2 tsp mushroom powder
Toppings:
1/2 cup chopped cilantro
3 stalks of green onions, just the green parts
2 serranos or jalapenos
bean sprouts
1/2 medium yellow onion
thai basil or italian basil
