    We use oxtail to make “caldo de res” (Mexican beef soup). The ingredients we use are: oxtail, beef chunk, carrots, onion, zucchini, corn, cabbage, and cilantro. The left over can be used to make shredded meat tacos, you’ll just basically need to chop onions and cilantro to dress your tacos.

    Just need to say this.... There is no jamaican monopol on the way oxtail soup is made! It is served in france, germany, italy and all over europe for centuries and there may be 100 different ways to cook it from country to country. So to all the ppl who say it is not "real oxtail soup" - you are kind of ignorant. Sorry that you think there is only one kind.... Julie you do you!!! Btw, here we put also put parsnips, parsly leaves and leek into the soup. And we leave the skin on the cleaned onion that is cut in half! It adds a beautiful golden colour to the soup😊🍜! Maybe you want to try that sometime, i think you would like it!

    We love oxtails and usually roast them, along with some roasted vegetables like carrots, onion, rutabaga, parsnips, turnips. Then and only then do we add them to water to stew a wee bit. We also love roasted bone barrow. And beef tongue. Thankfully we have homegrown beef since oxtails from the store are so expensive.

    One of my favourites and I cook it in my soup kettle but I add loads of veggies to it, store and freeze leftovers but I either roast or fry my meat beforehand to brown it a bit as I find that adds even more flavour
  • Yes, that is what I love about the slow cooker, I can load it up and leave knowing when I get back dinner will be ready and waiting for me.

    Ate alot of oxtail soup growing up. And it was cow tail, they call oxtail. I'm from minnesota and wisconsin.

    I'd suggest searing them quick first, deglaze and add all those juices. That browning adds another dimension of flavor 😋
