GUT-HEALING INSTANT POT BONE BROTH
Keto & Paleo Friendly. AIP diet friendly if you remove black pepper.

CHICKEN BROTH
1 lb pastured chicken feet
2 roasted chicken legs or chicken back (optional)
1-2 parsnips
2 carrots
1 yellow onion
2-3 celery stalks
3 tbsp fresh ginger
2 tbsp fresh turmeric
1/2 cup parsley
2 TBSP Apple Cider Vinegar
Salt
Pepper

*Use pastured chicken (or free range organic at the very least) as well as organic vegetables and filtered water.

Roughly chop up all ingredients except parsley (no need to remove skins on onions or peel things, etc).

Add bones and veggies to the Instant Pot

Add filtered water to 2/3 line in Instant Pot.

Add the apple cider vinegar and salt and pepper to taste.

If using Instant Pot, make sure the valve is closed and set the “pressure cook” setting for 2 hours.

Once time beeps, open valve and allow to depressurize

Strain out all the solids and add in a big bunch of parsley and let it sit there for 30 minutes or so as it cools. You can skip the parsley if you’re in a hurry. Strain the parsley and your broth is ready.

    I had to look up your post and thank you. For my 60th B-day I bought myself an insta pot and started doing bone broth with your guidance. OMG! I can't believe the dif, it has made for me. I work in the wall tower of a state prison, to get to my lofty post I have a 67 step spiral stair. My knees used to get so agree at me, After 2 weeks of B-Broth I have no pain! I can't say thank you enough.

    Great video! One quick suggestion that I do is I use my instant pot steaming basket. Put all of the bones and vegetables in therefore when pulling out its drain and separates.

  • This made a great stock - very gelatinous and flavorful. I omitted the turmeric and ginger, and added some thyme at the end with the parsley because I prefer a more classic flavor profile. Thanks for the tips!
