Yes. Have done it this way as shown. But, found that I prefer an omelet more drier, or well done. So often times I cook to make sure that the omelet is well set. No runny spots..

Not entirely sure what I did wrong but I saved it by just turning it into scrambled eggs.

I like my omelet with just one fold. Not rolled like a burrito.
