Perfect Roast Chicken

Ingredients

1 (5 to 6 pound) roasting chicken
Kosher salt
Freshly ground black pepper
1 large bunch fresh thyme, plus 20 sprigs
1 lemon, halved
1 head garlic, cut in half crosswise
2 tablespoons (1/4 stick) butter, melted
1 large yellow onion, thickly sliced
4 carrots cut into 2-inch chunks
1 bulb of fennel, tops removed, and cut into wedges
Olive oil


Directions

Preheat the oven to 425 degrees F.

Remove the chicken giblets. Rinse the chicken inside and out.

Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken.

Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken.

Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.

Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

    Who’s here at the end of 2022? 🖐😊 I completely forgot until now that THIS episode is how I learned how to cook bomb roast chicken and vegetables when I was 19 and a brand new young mom!🥲 18 years ago holy sht😭🥺 My son and I would wake up at 4am every morning, I’d make my espresso, he’d drink his b00b milk and I’d watch Ina and Food Network. I ended up going to culinary school in SF, CA and got my degree, became a chef, and then fulfilled my dream to work on Food Network and worked w/ Micheal Chiarello in 2006-2010. The rest is history now. But anyway, time flies. If you make this chicken, enjoy the moment in the time. Savor every bite. Nothing ever stays the same for very long🫶

    I must post again. As a single guy, I get 3 man-sized meals out of this dish with about 1/2 of the bird and veggies left over. I decided I would work the remains into a rich, hearty chicken soup with orzo just to shake it up and I wouldn't have to eat 4 more of the same sliced chicken dinners. I just made a ridiculously thick and rich soup that feeds an army. This recipe rocks!

    I just made this today. This is my first time following an Ina recipe. At first I was skeptical since it seemed too easy. This was my first time roasting a whole chicken and wow!!! My family loved it!! My mom is a great cook and she was impressed by this one. I highly recommend this recipe. The chicken came out super moist and delicious. The roasted onions were to die for.

    I’ve used atleast 10 different Roast Chicken recipes, some more traditional & some more daring, but I can say without a doubt, this one is by far the best. It’s so simple yet it comes out so amazing. I definitely recommend it
  • I watched this when I was still in high school and since then I’ve been the one in charge of roasting the chicken in our house 😂 I even slice the chicken breast the way she does

    My girl's watched her (I was already cooking as a young mom) Ina, Rachel, Giada, Martha, Emeril, ect. My daughter would ask me for the garlic peels to play w/her kitchen set & imagine a petite little girl yelling "BAM" my other daughter in the walker would crack up.   • Shout out to all the other little girls who had Ina, Nigella, Rachel, Sandra Lee, Giada & Paula as surrogate mothers growing up. My mother didn’t teach me anything about cooking so I would post up by the tv with my notebook and pen ready to take notes from these women lol it was frustrating having to write everything as they were talking so fast. This was before the internet was readily available for us poor folk.
