Garlic Roasted Potatoes

Ingredients

3 pounds small red or white potatoes
1/4 cup good olive oil
1 1/2 teaspoons kosher salt
1 teaspoon freshly ground black pepper
2 tablespoons minced garlic (6 cloves)
2 tablespoons minced fresh parsley

Directions

Preheat the oven to 400 degrees F.

Cut the potatoes in half or quarters and place in a bowl with the olive oil, salt, pepper, and garlic; toss until the potatoes are well coated. Transfer the potatoes to a sheet pan and spread out into 1 layer. Roast in the oven for 45 minutes to 1 hour or until browned and crisp. Flip twice with a spatula during cooking in order to ensure even browning.

Remove the potatoes from the oven, toss with parsley, season to taste, and serve hot.

  • One thing about Ina… she’s always going to caress the side of Jeffrey’s face when he comes around. Ina’s shows bring so much comfort to me for some reason. I watched her everyday while I was pregnant and on maternity leave. The beginning music intro to her show always rushes me with memories.

    The last part is goals, and when the husband said "want some wine" you know they were gonna have a good time
  • I stopped straight baking them so the garlic doesn't burn. Boil them first for a bit and I use chopped garlic in oil for baking. It's easier and way better for most stuff cause it's milder. You can bump up the garlic taste without the sharpness. Some garlic powder too, gives you another layer and again lets you get lots of garlic flavour but still keep it mild. Paprika, I don't know why. I put it on everything. And I love it with roast potatoes. Dry herbs, tossed with fresh when they come out the oven. Something like that.

    Hey!! Listen up!! I’m not a real cook. Just someone who has made it his hobby since he retired 6 months ago. I followed this recipe and it came out great! The only thing I did was put everything in a big bowl first.. oil, and garlic, mixed it all up. Then I put it on my cookie sheet and salted and peppered it. I figured that drizzling the oil wouldn’t work as well for me…the coverage would be spotty. But everyone loved it. I did too. Thank you! I subscribed and I can’t wait to see what else I can learn from you.
