In Italy we have a traditional recipe that combines potatoes and fava beans. This is my personal - and improved IMHO - take on the traditional recipe. Imagine tender bakes sweet potatoes, lovingly filled with creamy veg cheese, wholesome fava beans, and crowned with irresistibly crunchy fried breadcrumbs. Quick, easy, and bursting with goodness, this recipe is a must-try for anyone seeking a delicious and satisfying meal that is sure to impress even the pickiest eatersโ€ฆ Andโ€ฆ. Itโ€™s simply delicious ๐Ÿ˜‹ So, don't just watch โ€“ get cooking and let the yum magic begin!
INGREDIENTS (for 4 people) ๐Ÿ“‹

4 medium-sized sweet potatoes
250 grams cleaned fresh fava beans (without pods and skin)
2 cloves of garlic
150 grams of crustless bread (for me: turmeric bread)
300 grams of veg rice stracchino cheese (any soft spreadable cheese is ok)
5 tablespoons of lemon juice
4 tablespoons EVO oil
Herbs to taste
Salt and pepper๐Ÿง‚


PROCEDURE ๐Ÿด
Place sweet potatoes cut in half to bake in a 200ยฐ oven for about 40 minutes.
Blend bread then toast it in pot with 2 tbsp oil salt and pepper, let it get crispy (5/6 min).
Process stracchino cheese with 3 tbsp lemon juice, 2 tbsp EVO oil, salt and pepper.
Stuff the potatoes with the cream cheese mixture, fava beans and fried bread crumbs.
