Shoyu chicken recipe:
6 chicken thighs
1 3/4 cup water
1 cup soy sauce
1/4 cup dark brown sugar
1 thumb-sized piece of ginger
5 garlic cloves
5 spring onions
Thicken with 1-2 tbsp of cornstarch mixed with 2 tbsp water.

    Glad you mentioned that tip about resting the meat in the braising liquid. People tend to think that meat braised in liquid is immune from drying out but braised meats can definitely become dry! If you take the meat out when it’s still hot, it becomes super dry. Resting in the liquid allows the meat to absorb all that juice as it cools, makes a world of difference.

  • So to thicken the sauce just mix 2 tbsp of corn starch with 2 tbsp water, give that a mix and whisk it into the hot sauce until it is thick to your liking.
