2024 #everybitcountschallenge | Days 4-9

Yay! I am so excited to be in the month of August. After my visit with my mom we found out that my son and his family were moving to an apartment closer to their work and church. I understand them wanting to live in their community. That has made this week a little harder to preserve in but I got some stuff done. I also had some garden work to do and I am still kind of behind in that.

    I bought foam board at dollar tree. I cut to fit my shelves. The board presses in to the wire. Then you have a flat surface on the wire shelves for the glass jars. Loved this hack!

    So much done even if you didn't have as much time - WOW. I'm putting up ham and broth today, also. I boiled out a bone that had so much left on it and once cooled, pulled the meat and fat off then shredded the meat into bite sized pieces and refrigerated both broth and the meat. Today I will can up tons of broth with a little meat in eat and I use them for cooking cry beans or even green beans later in year. They make wonderful dry bean flavor and even some will be used for soup. I didn't realize I wasn't suppose to can cooked ham but never had a problem I guess since I pulled/cut all the fat and will skim any fat on top of the juice today, before I can them. Since it had been cooked before I also cut off any hard rind even though there is so much flavor in it - mostly it is gone once I boil it out into the juice. I'm so glad you did this as I know you always practice safety and I guess I've been doing it safely all along. Just seemed reasonable to do. Love your tomato slice treats! Will you use them in any dish later or just eat them for snacks? Seems they would make a delicious soup, also. Bet they would make a great Mexican lasagna! I know you will miss the kids but be able to do more "Penny" stuff to help make up for the loss. Also glad you got to spend quality time with your Mom. Love you, Mary
  • Really nice shelves, I bet you will find plenty to stock them with. I definitely have had some good days and some not so productive days this month keeping up with the challenge.

    If you use a weighted regulator you don't need to get the pressure guage tested. When it does the hula dance it's up to pressure, no need to look at the guage. I actually threw away the topper that came with my canner 😂
  • That looks like partial board, you might want to put some braces in the middle to keep it from bowing, hate to see it all fall in the floor. Keep up the good work.
