Preserving Food in August | Every Bit Counts Challenge

The garden is at peak production and is just exploding with food, so I'm going to show you some I'll be preserving in August that will feed my family year round. August in my Missouri garden means that I am harvesting tons of tomatoes, peppers, squash, zucchini - all of the things, and if you don't have a plan the abundance can become overwhelming! Today I was able to use some of that harvest to make stewed tomatoes loaded with okra, peppers, and onions, and a potato soup starter to make dinner time easy! Hopefully this video gives you inspiration and encourages you to preserve some of summer's goodness, so you too can be eating from jars all winter long!

    I wish my tomatoes were coming in now. We had such a cool June that mine are behind. I’m loving all your beautiful produce!! Also I dehydrate the tomato skins and powder them. They’re so great in a million ways!
