1 cup (160 g) white rice flour

    Makes a nice crisp flatbread. I used exact ingredients, proved in a warm oven, cooked in a cast iron pan on hottest element setting. No puff.

    I tried with buckwheat flour, water, spices and salt, baking soda( no yeast). I got bubbles , or small pockets.
