    I made this Tomato Soup. The first time I made it I used a potato masher but ended up purchasing an immersion blender which done wonders for the soup. I have made it two times and it will be my to go recipe. I also love to watch you cook. I will be looking up more of your recipes as you are a great chef. Thank you! Teresa from Ohio
  • Fun tip if you blend it over the heat it helps prevent the fats in the olive oil from separating which is what would break the sauce and cause that bitterness and as long as it's on the heat you can add a small amount of water, butter or both to help pull it back together

  • I made my first tomato soup a few months ago and it came out phenomenal! Used fresh tomatoes from our garden, three sweet peppers, two Vidalia onions, fresh baby carrots, garlic, sugar, I cooked it in butter with no olive oil, used cottage cheese as my thickener along with cream cheese, seasoned as we like, water was my liquid. My child said she doesn’t ever want canned soup again. Thank you for sharing your version of the recipe.
  • I made this recipe for my wife while she was recovering from surgery. Now I'm making it at least once a week because we both enjoy it so much. It really is so easy, yet delicious. For someone like me who has only moderate confidence in the kitchen, this soup is an ego booster. It's great to taste something and think, "Wow! I did this!" It's even better when the person you love says, "Make me some more of that." :D

    Made this a couple weeks ago when snowing also. Had nice thick sliced bread grilled cheese sandwiches with it. One of the easiest, best tomato soups I've made and I've been cooking and baking for six decades! Love your baking videos, especially the Christmas cookies with your fam. So much fun to watch!🥰

  • I make creamy tomato and basil soup every Christmas Eve with herbed grilled cheese sandwiches!! Very similar to yours, only I use roasted tomatoes.

    I made this tonight for my BF and it came out EPIC. I put in extra olive oil and simmered the onions on low het for 30+ min then the garlic like you said (I used minced garlic in a jar), then after adding in the tomatoes I added the 3 cups of broth, I made the broth from beef bouillon and I made it strong! Tossed in a healthy amount of Italian seasons and thyme - BAM! Let it simmer for about an hour and then used the submersion blender gently. WOW it came out good. This is something that was much easier to make than I realized! edit: oh yeah I didnt use any cream because I didnt have any ahhh

We are preparing a dinner party tomorrow and making this soup tonight and also a tried and tested hummus recipe, which we have been making for years. The trick about adding the olive oil last is amazing, as this is the first time that our hummus is not bitter! The soup is amazing, too!

  • Just made this tonight! I added rosemary, thyme, and oregano on top of basil. Additionally I used avocado oil in place of olive oil and it turned out really yummy especially paired with thick and cheesy grilled cheese. Thank you for the recipe! It's a keeper for sure! And it is wonderful on a cold fall or winter night.

  • I used bacon grease instead of olive oil. And threw in a few little pieces of the bacon, as well. I put some red pepper flakes, and cayenne in, for a kick. As well as some dried herbs. It came out great! Thanks for the lovely recipe. (I also made your Avgolemono, from your book. It was very good. Fed us for a few days. 😊 I really appreciated that you taught how to make stock as part of the recipe. There's lots of fun stuff like that in your book.)
