Additional Notes:

Chicken Selection: Use boneless, skinless chicken breasts or thighs for this casserole. You can choose either option based on your preference. Make sure to cut the chicken into bite-sized pieces for even cooking.

Potato Variety: Opt for starchy potatoes like russet or Yukon Gold, as they hold their shape well during baking. Cut the potatoes into uniform chunks to ensure they cook evenly.

Vegetables: Feel free to add vegetables to the casserole for added flavor and nutrition. Diced onions, bell peppers, carrots, or peas work well. Sauté them before adding them to the casserole to soften them slightly.

Sauce or Creamy Base: You can use a prepared sauce like cream of chicken soup or make a homemade creamy base using a combination of chicken broth, milk, and flour. This adds moisture and flavor to the casserole.

Cheese Topping: For an extra touch of indulgence, sprinkle shredded cheese over the casserole before baking. Cheddar, mozzarella, or a blend of cheeses work well. The cheese will melt and create a delicious golden crust.

Baking Time: Bake the casserole at a moderate temperature, around 375°F (190°C), until the chicken is cooked through, and the potatoes are tender. The baking time will depend on the size of the chicken and potato pieces, so check for doneness by piercing them with a fork.

Garnish: Once the casserole is out of the oven, garnish it with fresh herbs like chopped parsley or chives to add a pop of freshness and color.

Leftovers: Store any leftovers in an airtight container in the refrigerator. Reheat them in the oven or microwave until heated through. The casserole can be enjoyed for up to 3-4 days when properly stored.

  • Man I love it when you get to the point of making the Recipes. Instead of telling a life long story before you get to the point of making your recipe. Thanks
  • As a Chef, I'm thinking parboil the potatoes, add green onions, a touch of rosemary, and as pinch of thyme. Mix in all the cheese and top with crushed corn flakes for crunch. It won't do much for the watery texture, but it will increase the flavor dramatically.
  • I'm thinking: melt some butter into about a cup of panko bread crumbs and sprinkle on top before baking. The bread crumbs will darken and give the top a bit of crunch to contrast the texture with the casserole.
  • Hi Dave I tried this recipe with a twist. I added 1 small onion and two cloves garlic and did the rest to your recipe. My family absolutely loved it. I did serve it with mixed steamed vegatable with a little butter and salt and pepper. They loved it. thank you Phyllis Baker

Glad you actually have a web site most dishes on here are just on here or other social media sites... without an actual recipe to follow as opposed to just a video..thank you 👍
  • Super simple and straight to the point. I found that pretty unique for a cooking video. Thanks for the recipe !
  • Well, I made your recipe today. It was a hit. I had to change it a little; I didn't have enough sour cream so I substituted some cream cheese. Sour cream and cream cheese combined was still less than a cup, which made the casserole a little thicker which wasn't necessarily a bad thing. Also, I had some white mushrooms that I sliced and added to the mix. Since I used leftover rotisserie chicken I had a bunch of chicken skin. I fried 3 strips of thick-cut bacon till crispy, set it aside, then fried the chicken skin in the bacon fat until the skin was nice and crispy. I sprinkled crumbled up (actually cut up with scissors) bacon bits and chicken skin bits on top of the casserole, adding a little crunch. It worked out very well. Thanks for the recipe.
