  • Great first course, but the foie gras was kept on the griddle far too long. Foie gras does not need that heavy of a "crust". Foie gras requires impeccable timing for the perfect presentation. As soon as the onion had caramelized, he might have put the foie gras on top of the onion to retain heat while not rendering it down to nothing, plus, it would further "season" the onion with it's delicate flavor. Merely a suggestion from a retired fine dining chef who has plated many a foie gras appetizer.
