Recipes (all serve 1)

Chickpea pesto baked eggs:

3 eggs
120g cooked chickpeas
150g mushrooms
70g spinach
2 tbsp. pesto
salt & pepper
To serve (optional):
handful parsley
yogurt

Scramble, plantain & avocado:

3 eggs
1/2 plantain
1 avocado
1 tbsp. lime
handful coriander
salt & pepper

Blueberry oat and brown rice porridge:

1/2 cup oats
1/2 cup cooked brown rice
120g blueberries
3/4 cup almond milk (add a touch of full coconut milk for extra creaminess)
1 tsp. cinnamon

Bone broth bowl:

350 ml bone broth
Vegetables of choice: cooked sweet potato or squash, cabbage, leeks, kale, ginger.
100g Chickpeas or butterbeans
60g Rice noodles
1 tbsp. kimchi
2 eggs
2 tbsp. tamari
1 tbsp. sesame seeds or shichimi

Plantain & oat pancakes:

1/2 or 110g ripe plantain
3/4 cup oats
1/4 cup or 70g greek yogurt
1 egg
1 tsp. cinnamon
1 tsp. vanilla extract
1/2. tsp. baking powder
2 tbsp. extra virgin olive oil
Knob of butter (to cook)

    didn't have any pesto for the chickpea eggs so I used harissa and dried herbs with a pinch of sugar to balance the heat, and a big squeeze of lemon juice to finish....when I tell you MY EYES ROLLED BACK IN MY HEAD!! Pure joy on a plate. Thank you for these imaginative, delicious and totally do-able recipes 💖

    The fourth one, the noodel soup is the love of my hearth! 🥰 I love to make currys, soups, buddha bowls and warm veggie salads for breakfast. The soup you mentioned is calling my name, I use to make so many similars to this one, packed with other nurishing flavorings such as: turmeric, gochujang, home made curry pastes, sesame oil, fresh cilantro and all the asian goodies. I'd love to see more breakfast or savory dish ideas, together with some "what I ate today" videos! 😍😋 Obsessed with your stlye, all the exciting and flavourful recipes! ❤

    Thank you so much for these creative, nourishing recipes! I love cooking but am not an early bird--with a new early day commute I need any inspo I can get to take the time to eat a full breakfast in the morning! I especially love the out-of-the-box ideas like the soup for breakfast--helps me realize how creative and fun breakfast can be! I'll definitely be trying these, and please share more!! I'd love to see a what I eat in a day/week video :)

    thx Tish! this year I m trying to eat more breakfast and stop being in a hurry in the morning. This definely helps a lot, as I'm also a savoury type of person in the morning and one that get bored easy

  • I'm a huge fan of the channel and I've done soooo many of your recipes (the carrot hummus is my go-to whenever I have a party coming up), but girl, as a butter-on-toast person in the morning these breakfasts are making my stomach dance lol I'll definitely be trying them for lunch tho!     When the plantain is super ripe, you can bake it inside of the peel and eat it like a baked sweet potato x

    As a Puerto Rican I have never thought of putting plantains in pancakes but now I'm super intrigued! Everything looked SO delicious. I'm definitely a fan of the broth bowl you made; I'll be trying that out as well. I usually do a rice noodle ramen type of thing which is very similar, but I never thought of doing it for breakfast which is just silly. I might use a peanut satay sauce and some sriracha instead since that's what's in my fridge at the moment. Cheers!

    All the recipes looked delish, but the Chickpea Pesto Baked Eggs spoke to me. I always eat eggs for brunch, so this would be a good addition! Recently saw Turkish Eggs recipe too, so lots of good baked egg dishes to try out!

    the bone broth bowl looks so good! Since I work from home, I usually have breakfast a little later in the day and that's just the perfect cozy comfort thing to eat in the morning.
