Let's all give thanks to Jacques' friend Susie because this is a terrific method for keeping baked chicken succulent and moist. Mayonnaise is a polarizing ingredient, but in this instance, it's doing its job right.
Holiday hack: you can also try this recipe with skin-on turkey breast.

2 chicken breasts, salt, 2 1/2 tsp chili-garlic sauce, 1/3 cup mayo, chives

    Never ever underestimate the uses of mayonnaise, especially when baking. I've done something similar with lobster tails and it's AMAZING in its flavor. This is going to go into my rotation. Served over rice with plenty of that sauce.

    The most endearing thing about Jacques is that he spreads chili sauce and mayo with the measuring spoon he’s using, just like the rest of us would do. :-)

    I know mine will not turn out anywhere near as good as Jacques, but I’m going to give it a go this weekend and have fun doing it. I love the simplicity of Jacque’s cooking. Zero pretension and no BS. He gives you the confidence to try different things in the kitchen. Would love to meet this absolute gentleman.
