Jacques Pépin's recipe for chicken scallopini with zucchini calls for a moist chicken breast and fresh summer squash like zucchini. This recipe is healthy, filling, and ready to eat in around 20 minutes. Serves two.

  • I've made this 4 times since I first watched this video about a month ago. It's absolutely delicious. You can be careless with it and it still turns out amazing! Every time I've made it, my wife and I are astonished at the flavor that comes out of relatively simple ingredients. Jacques makes cooking amazing food so simple and approachable. A true master!

    Its refreshing to see an icon like Chef Jacques making it simple and tasteful.
  • It is great to see that this world class chef DID NOT dredge the chicken in flour. Flour adds a non sequitur taste to the meat that isn't particularly pleasant. The initial concept of dredging meat in flour before placing it in a hot pan of oil was to reduce hot grease spatter; not to improve the flavor. I think the concept was invented in the days of Escoffier to solve the problem of his line cooks having hot grease spattering in their faces 10 hours a day.
