Ingredients for oatmeal bread 1 recipe:
3 cups of oatmeal.
2 eggs.
1 tsp salt.
1.5 cups of yogurt.
to add something.
1 cup walnuts.
Add any nuts and seeds to taste.
1 tbsp pumpkin seeds.
1 tbsp sunflower seeds.
1 tbsp baking powder.
Bread pan 30/11 cm.
11/4 inch.
I added a few sesame seeds.
Bake in a preheated oven at 180°C for 35 minutes.

Ingredients for Oatmeal Bread 2 Recipe:
2 eggs.
150 g yogurt 5 oz.
half a teaspoon of salt.
2 cups + 0.5 cups 275-280 grams of rolled oats.
9.8 oz.
grind in a blender.
1 tbsp baking powder.
Add any nuts and seeds to taste.
I have a mix of sunflower seeds, pumpkin seeds, sesame seeds, flax seeds.
Bake in preheated oven at 180C 360F for 25 minutes.

  • Just a tip, if you soak the oatmeal in the yogurt for a few hours before baking it you will get a much softer, more moist texture!!

    for those who are not eating eggs it can be baked with chia seeds instead of egg and result is very nice.. mix 1Tbsp chia seeds with 3 Tbsp water, let it soak 10-15 min and you have 1 egg.

    So now I have made this recipe four times! Here are my comments and suggestions: First and foremost, I recommend cutting out the salt totally. There is no need whatsoever for salt in this recipe. Salt is bad for our health, when it is added excessively to food. I never, ever salt anything I cook, except for potatoes, which need it. I use other herbs and spices to flavor foods. Salt retains a lot of water in the body cells, which means that your stool is going to be a problem. It will cause a state of constipation. Sorry to have to mention that here, but it is important. I noticed this change after eating my lovely and very delicious bread for almost a week now. Next, I recommend mixing all the dry ingredients before adding them to the mix. Do not stir each in individually. It will make for a better quality of dough if you first mix all your oat meal, crushed nuts, baking powder and maybe craisins or other dried fruit, like I did. Also, depending on the size of the eggs, you might want to use three instead of two. Beat them to a minor froth, then beat in the yogurt, until the two are completely blended. Then toss the dry mass on top and stir it together. And for those of us who live in the USA, 1 packet of baking powder is 14 grams, or 1/2 oz in weight. Once you have your dough in the baking form, smooth it down nicely and sprinkle the kernels of sunflower or other over the top, tap them down very gently into the dough surface to make them stick there. Then take a knife and scorch the raw dough down the length of the middle. This will give the dough crust a controlled way to break in the baking. If you don't it might break more to the side, and it doesn't look that pretty! I have used also both, wax paper, and aluminum foil to line my baking pan. Aluminum beats wax paper anytime! It can be hard to get off the wax paper from the finished bread. Use aluminum and smooth it out perfectly, no creases! Then you can lift the bread out of the form right after baking, to let it cool down, by just lifting out the foil with the bread in it. And I baked my dough at 190 C, which is 375 F, for 40 minutes, in a convection oven. It turned out perfect every time. I did one with just walnuts, one with walnuts and sunflower seeds (1/2 cup each), one with walnut and craisins, both chopped lightly, and one with walnut, craisins and dried blueberries. Yum! It is delicious like cake! Fluffy and perfect in its body consistency! Happy baking!

  • I made scones with this method today. 400ºF oven, 8-10 minutes. I chopped up a Medjool date and some hazelnuts, added 1 teaspoon of cinnamon. Dropped them by Tablespoons on a waxed baking sheet. They are delicious. I am in New York City, USA.
