Ingredients:

1 cup or 130 g oatmeal.
1 cup of hot water.
Mix well.
Leave to rest for 10 minutes for the oatmeal to swell.

2 eggs.
1 pack or 120 g natural yoghurt.
Mix well.
3 tablespoons erythritol sweetener
3 tbsp melted butter.
You can use coconut or olive oil.
1 cup walnuts.
Chop with a knife.
a pinch of salt.
1 tbsp baking powder.
3 tablespoons coconut or almond flour
1 tsp vanilla essence.
Mix well.
1 glass of berries.
I have blueberries.
Mix gently.
Grease a casserole dish with butter or vegetable oil.
Bake in a preheated oven at 180°C for 40-45 minutes.

    Yes, I baked this cake this afternoon and it's moist. No water added because the yogurt softened the oatmeal. I will leave out the fresh blueberries next time because my cake is too moist. However, I can use dried blueberries, I think. I baked this cake at 350-degree Fahrenheit. No sugar. I used 3 -Tablespoon honey. I baked this cake for one hour. I hope my comment maybe of useful for those who love this healthy cake. Thank you for reading.

    I made this yesterday. I used quick oats, and 130 grams came out to 1 1/2 cups, not one. I substituted canola oil for melted butter. I baked it for 50 min in a glass loaf pan at 325 degrees F. I wasn't impressed with the taste. Today I tried slicing off a thick slice, around 2-3 inches, put it in a bowl, poured on just enough sugar-free hazelnut coffee creamer to soak in, and microwaved it for 15 seconds. It was "sehr lecker.". If you don't like it right out of the pan, try my way of serving it before you give up on the recipe. I think it would also be good with a diced apple and some cinnamon in place of berries, and maybe substituting applesauce for the oil.
