IP: Chicken Noodle Soup

    So good! I wrote out her recipe and thought I would share it in the comments for anyone else who likes to read a recipe 25 times while they cook hahaha. Here you go: Ingredients: - [ ] 4 peeled carrots - [ ] 4 stalks of celery - [ ] 1 whole yellow onion - [ ] Garlic (however much you like) - [ ] 1 1/2 tsp of salt - [ ] 1/2 tsp of pepper - [ ] 1 bay leaf - [ ] 1/2 tsp of thyme - [ ] 2 tbsp of parsley - [ ] 1 tsp of oregano - [ ] 4 cups of chicken broth (one box) - [ ] 2 1/2 - 3 pounds of any type of chicken - [ ] 3 cups of extra wide egg noodles (under 1 bag size normally) Recipe: Start off by adding 1 tbsp of virgin olive oil and 1 tbsp of unsalted butter to insta pot (not turned on yet) Cut top and bottom off of the 4 carrots and then quarter them. Quarter 4 stalks of celery. Once cut add it into insta pot with carrots and oil and butter Chop up onion add with the rest of the insta pot and mix all together NOW on sautée option sautee all ingredients (3- 5 min) you want just the onions to be translucent and soft. Don’t worry about the carrots and celery being soft. After onions are translucent add garlic for about 30 secs to just get fragrant. Leave on satue for next steps. Add 1 1/2 tsp salt and 1/2 tsp pepper Add 1 bay leaf Add Seasonings below and stir it up (insta pot still is on Sauté option) - [ ] 1/2 tsp of thyme - [ ] 2 tbsp of parsley - [ ] 1 tsp of oregano Add 4 cups of chicken broth Add 4 cups of water Add 2 1/2 - 3 pounds of chicken. Can use whatever you can but have skin and bone to add flavor to soup Put lid on and Set to high pressure for 10 min Remove chicken and then remove skin and bone and shred Add 3 cups of extra wide egg noodles straight to pot Now turn on Satue option once again and cook noodles for about 6 min or until tender Once noodles are done add chicken back into pot and press cancel on insta pot Mix all together and serve!

  • Hind Quarters are dark meat breast and wing are white meat. This looks so good. I worked for a poultry producer for 13 years and made many pots of soup and this looks so good.

    Does the noodles keep absorbing liquid? Usually I find it best to cook the noodles separately and cook them off then add them that way they don't keep absorbing the liquid?

  • Dice onions and brown them while cutting up celery and carrots! In my Instant Pot for soups, roasts, etc. I prefer my veggies (aromatics) a bit chunkier. Hint: remove meat then shred it in either a stand mixer (lower setting) or hand mixer in a deep bowl--easy!

    This a great recipe. I add a can of condensed cream of chicken soup as part of the 2 cups of water to enhance the flavor a bit..

    Put your onions in the refrigerator the day before you plan using and you won’t shed any tears when you chop them!
