  • My grandmother's cook book has the following pound cake recipe: One pound of flour, wheat or rye preferred but mixed with corn passable, one pound of molasses or cane sugar, one pound of butter, goat or beeve, three duck or six hen eggs whole, with a pinch of salt and a dram of local taste. Oven heated to singe a hair and bake until clean straw. We still make it at least once a month.

We do not eat a lot sweets, but I love lemons as does she, so this was a special treat and it turned out perfect in my small sized cake pan, and the glaze was also wonderful. Your presentations are always so helpful and positive. I've used many of your recipes and techniques and they are all great.

    Lemon pound cake is my favorite cake. I even use the recipe for making birthday cakes. I always add lemon zest together with sugar to the already creamed butter and whip it for another 4-5 minutes on medium-high. I also add 2 generous tablespoons of greek yogurt or sour cream to the dough (instead of the milk). My friend who works in a bakery told me to try this method a few years ago and I've been using it since. It always comes out very lemony and moist. It makes a significant difference.
