This caldo has been in my family for generations and today I’m gonna show you step-by-step how to make it right in your own kitchen. It is amazing, delicious and warms you from the inside out.

Sure it’s traditional to eat when it is cold outside or when your feeling sick - but honestly we eat this all year round because it is one of our favorites.

I’m talking about CALDO DE POLLO!

Now different people use different veggies, different ingredients and different techniques, but I’m gonna show you my family recipe that was taught to me by my mom, which she learned from her mom too.

Here is a pro-tip: we like to use LEG QUARTERS because they have a little more fat, a little more flavor and are more forgiving if you happen to overcook it. You can use the white meat but you really need to be sure not to overcook it and dry it out.

And everyone knows Caldo de Pollo goes best with a delicious cup of Mexican Rice. Be sure to check out my recipe on how my mom makes that one, too.

Here are the ingredients for the Caldo de Pollo:

– Leg quarters
– Corn on the cob
– 1 Zucchini
– 2 Carrots
– 1 Celery Stalk
– 1 Onion
– 3 Small Papas
– 1 Jalapeño
– 1/4 Cabbage
– 3 Garlic Cloves
– 2 tsp Comino
– 1 tbsp APC OG

  • When I was a kid in the Chicago area, I used to go to this PePes on Calumet Ave. They had a version of this soup that is imprinted in my memory. It took me years of tinkering with the recipes found online to finally get close enough to please my soul. It was the cumin. I will deffinatly try this version to see what I can take from it.     This is what my dad would make for us when I was like 6 years old up to when I moved out.. at lest once a week, lol i have the last in the back of my mouth how i remember it. me being older i never really see hem much or get to enjoy he's cooking but today I had to ask hem to make it for me, and he did, this was one of thos foods that bring you back to being a lil kid for me... and his was the best IMO lol.. thanks for the video

    My mom never added cabbage to chicken soup only to beef soup but I like the flavor of the cabbage so I add it to my chicken soup.

    Man you can’t go wrong with Caldo de Pollo, you know what they say it ain’t Campbell soup🤣🤣 you’re right ArnieTex everyone makes it the way they were taught, I just made a small pot on Sunday and me and my wife had the last of it yesterday😋 it hit the spot especially because it’s been cold. True comfort food😉
