I made fluffy and soft potato bread.
It's simple, but good for brunch.
Instead of potatoes, you can use sweet potatoes or sweet pumpkins.
Add other additional ingredients such as sweet corn or green onion
You can also make it to your liking.


*** Weighing is scale (g), rice spoon (tbsp), and teaspoon (tsp).

[Diameter 24cm]
✤ Dough
- 200g Bread flour
- 61g, 1 Room temperature egg
- 80ml Warm milk
- 4g Instant dry yeast (big 1tsp)
- 20g Sugar(2tbsp)
- 3g Salt (flat 1tsp)
- 30g Melted unsalted butter(5tbsp)

✤ Charging
- 2 Potatoes (430g) Weight with peels
- 3 pinches of salt
- A little pepper powder
- 40g Heavy cream or milk(4~5tbsp)
- 140g Mozzarella cheese

✤ Toppings
- Milk (before baking)
- 2tbsp Melted unsalted butter (after baking)
- Parsley (optional)

✤ TIP
- You can substitute vegetable oil instead of butter.
- You can substitute milk for eggs.
- You can substitute sweet potatoes, sweet pumpkin, etc. instead of potatoes.

    Just finished and ate a slice... Delicious!!! Super soft. Took about 3 1/2 hours from prepping to out of the oven. But it was well worth it. With more practice I'm sure I can get the time down. I seasoned the potatoes with salt, pepper, garlic powder, and some chilli powder. Gives the overall recipe a nice kick.
  • I just love your sense of humor ;-) when you pick up the ingredients, keeps me tuned in. Also love the easy and non complicated way of baking..all remind me of my grandmothers delicious food that we are all either too busy or lazy to make.   • Looks absolutely yummy. In India, we make it in the form of a stuffed tortilla, minus the yeast & do not ferment the dough. It's cooked on a griddle & spices & condiments & fresh coriander are mixed into the potato stuffing. Cheese is optional. Thank you for your recipe. Will definitely try it out.

The way you make sure to show the thickness of the dough and the rising and falling of how ingredients are supposed to look gives me hope that I'll be able to easily replicate the recipe.
