Little tip about the butter making: you should kneed it in a cold water bath (wash it) to get rid of the buttermilk, refreshing your water several times. Do this until your water stays clear. This is important if you're not planning on using it all immediately. If you don't remove all the buttermilk it will sour within the week.

Just a tip to spray the top of the bread with water before baking. That will help eliminate that dried flour, add to the crust and give a more even color. Once upon a time very long ago, I worked for Au Bon Pain and I had the fortunate experience of learning the baking process as a manager. They had really good baguettes and we would spray them.

Food processor tip when making bread. Turn on the processor before adding the liquids, allows the flower to be moved to the outside of the bowl, then pour the water in. Helps stop the dough from getting under the blade.

  • After I watched this video for the first time. I spent a few hours searching for a food processor to purchase. Was a little out of my price range but later that day I went to a thrift store and found a 1983 Cusianart. Basically unused. For $12. I use this things every single day sometimes up to six or seven times. bread, butter, peanut butter, nice cream, pie crust .... I can't stop!

I've been trying to make homemade baguettes forever and never had success. First time trying your baguette recipe with the food processor they came out perfect and amazing!
  • I got a food processor in the past year in order to benefit from it, and while I haven’t used it much, it’s videos like this one that encourage me to want to use it more and more.

Cultured butter is amazing! I would suggest kneading it in ice water a few times until the water is clear. It’ll get all the buttermilk out of it and make it last longer, and I think it helps it taste better.

I bought my food processor at a thrift store about 20 years ago. It was old then. Jcpenny and no buttons just twist to work or no twist that's it. I have 3 slicing blades, a dough blade and a cutting blade. I love it. We have used it for so many things. It just keeps going. I may be ready to give it to my DIL as my crew fades out and hers is in full swing.

I remember making butter in school mini years ago. We were able to enjoy it on crackers and bread. I thought it was the coolest thing and then I shared it with my grandmother who did most things homemade she lived on a farm and she showed me the way she makes it it was all delicious. Thanks for sharing
  • Omg!!! I am mind blown by the cast iron + ice cube trick to create steam in the oven!!! Amazing, thank you so much!!! 😱😱😱

I simply love the way you explore the unknown paths of cooking. I teach cooking myself and one thing I learn them is to experiment and explore. Learn by making mistakes. So many chefs think there is only ONE right way to make something - usually THEIR way, haha. I have been on similar journey with buying and using my kitchen appliances and I relate to your experiences a lot. Thank you for sharing your path and heart for food and home cooking.
  • I juat love that you made cultured butter and appreciation for the peanut butter, quick pickle and meatball recipes... An excellent video all around fof the food processor. Very creative and useful
  • @lisaboban
I love watching you futz with that food processor because I do the SAME THING every time I use the freaking thing.

Mike, your video editing has risen to another level!! I'm loving this 🤩 if you have an editor, bravo! If not, bravo still!!! I haven't watched in several months. I like the varying tones of voice and the concluding comments at the end of shots, it makes things enjoyable to watch AND listen to! Great job
  • If you remove the silicone seal from your clip top jars, you can close them which allows airflow but stops ingress of stuff.

Very cool content today! Thx! Similar to your meatballs, I just used my food processor to make sausage from boneless country ribs. Have to cut into cubes and freeze awhile before grinding, then add seasoning of your choice and shape. Refrigerate to allow flavor to develop and fry. Delish! 🙂

That was the fastest 20 minutes I've ever spent on YouTube. I got to the end and was wanting more. Thank you for helping us get more out of our food processor.
  • Perfect timing! I just bought a food processor to make pie crust and now I'm trying to figure out what else to do with it. Now I've got some things to try!
  • Totally unbelievable videos you make. They zip right along, entertaining, easy and practical. Love all the vids I’ve seen so far. I will need to make the peanut butter as I can’t seem to find any without sugar lately. The normal one I buy I have to stir and is a bit of a pain, literally, then the bottom still seems dry toward the end. Thank You So Much! I shared your vid with SIL who is gluten free dependent.
