8- 10 servings

Cowboy Chili

2 pounds ground beef (wild game, chunk meat, etc.)
1 large yellow onion, chopped
2 (10 oz.) can Rotel (we used chunky), drained
1 Rotel can water
1 (15 oz) can tomato sauce
1 (16 oz) can kidney beans, drained (or your bean choice)
Green Chile Chipotle Relish (available kentrollins.com/shop-1 or 3 - 4 chipotle peppers in adobo sauce, chopped or to taste
1/3 cup chile powder
½ tsp cumin
2 tsp oregano powder
2 tsp paprika or smoked paprika
2 tsp salt
3 tsp minced garlic

1. In a large pot or 12” Dutch oven brown the hamburger over medium high heat. Season with salt and pepper or seasoning of your choice, to taste. As the meat begins to brown, stir in the onions. Continue cooking until the meat has fully browned and onions are tender. If there is a lot of excess grease, drain.

2. Stir in the Rotel, water, tomato sauce, beans, chipotle peppers or relish. Stir in the seasonings. Adjust taste, if needed.

3. Cover and cook over medium-high heat until it reaches a boil. Boil a couple minutes. Reduce heat and simmer for about 40 minutes, stirring occasionally.

4. Serve warm with cheese, onions, sour cream, etc.

  • I work at a middle school and we did a chili cook off. My family convinced me to make your recipe and enter it (they love your recipe and always want me to make it). So I made it and entered and won first place. So in a couple of weeks I have to work in a concession stand for two days. Our building principal asked me to make the chili so we can sell bowls of it for the event we are having since they loved the chili so much.

Guess what Kent? I competed in my school’s chili cook off today, used your loving recipe, and I won first place. The on ingredient I didn’t have was your spicy relish, because I didn’t have time to order it, prior to the date. Yet, all went well. Also, I made some cracklins cornbread to accommodate the chili. I wish I could send you the pictures. Yummy, it was I tell you. Thanks for sharing!🌹♥️
  • I totally agree with Kent Rollins about NOT using Rotella motor oil

Me and my dad started making this recipe about 6 months ago and we haven't looked back. I'm eating a bowl as I write this and there's nothing like it. Perfect flavor, perfect heat. We put this on everything. Heck I might even put it in my coffee. Best chili recipe I've found anywhere. It's a part of the family now. Thank you Kent!

I love the way he words his words, real cowboy like lol.

Ok, I completely lost it when he said, “self-cleaning oven”. LOL 😂😆🤣 Mr. Rollins has a great sense of humor. I just recently discovered his channel. I’m amazed how he can cook a variety of foods without the need of fancy gadgets or an ultra modern kitchen. Living a simpler way of life is better. Greetings from west Texas 🌞🌵

I just made this chili last night for my kids’ church youth group... and it was a hit! Everybody loved it. I’m so glad I doubled the recipe and held some back for me, my wife, and my youngest son because there was nothing left when I picked up the kids afterwards.

I found an old chili recipe in an Aunt Bee's Cookbook a while back when I was in the Navy in my early 20's. I thought it was so good that I adopted it as my own. I would make a big batch and invite my Navy friends over. They loved it. It is very similar to this!

Now I don't know why YouTube felt like I need Cowboy Chili in my life, but I'm glad it did! Really nice and love from Finland!
  • @SvenBraveheart
Perfect male cooking. Above that i love the fact that you are responding to comments two years after. Mad respect from Poland!
  • I remember my late mother kept her cast iron in the oven when not in use. It was a gas oven with a pilot light, which kept the oven about 85 to 90 degrees. She said it kept her cast iron seasoned and dry. Never saw a spot of rust on her cast iron, and she had a special pan for eggs, and they never stuck. I love cast iron cooking. Keep up with the great videos Mr. Rollins.

I started making chili 2 years ago, and have loved making them. My recipe has now received a huge upgrade, thanks to Kent.
  • Thank you. It's so important to our American families that care about old fashioned recipes and authentic American cuisine. And from you I see nothing but genuine authenticity.

Would love a bowl of Kent's Chilli, a few beers and a good ole chat by big bertha....
  • @jimboslice4696
I’m currently waiting for my chili to be done using your recipe😁 with a side of your cornbread recipe too. Can’t wait to feed my wife and son and get a cowboy dance out of them. Thanks Kent! From our family to yours
  • From a Chili efficianado, I can honestly say I love this and most chilis. I mean, I LOVE chili. I have made chili recipes from 'round the world. Chili dogs, chili & eggs, chili n tamales, chili burgers, chili pie, frito pie, Yankee chili mac, even chili cheese pizza. I awoke one night to visions of sundae glasses filled in layers with chili, refried beans, more chili, sour cream and guacamole, chili again, covered in Cheddar cheese sauce--all pieces chopped to pass through a straw! Shoot! Just two weeks ago my wife and I drove three and a half hours one way to San Antonio just to have chili from Texas Chili Parlor. Gospel truth, that right there. And, Sir... I have watched you for a long time. I've stolen many ideas from you. I appreciate you immensely. Albeit, chili... Real cowboy chili... Texas Cowboy Chili... ...simply ain't got no beans. Real Texas Cowboy Chili is made with whole cubed meat (preferably brisket), just a few flavor ingredients including either strong coffee or Shiner Bock beer, simmered for at least four hours. You receive automatic forgiveness, though, no penance necessary; you ARE from Oklahoma, after all. A man can't help where he's born. This is not a complaint. Just an as is.

Now this here is what I like to see on youtube. Love your cowboy demeanor and you're easygoing way of explaining things. I always said I grew up 200 years too late. Would love to have your campstove style setup. Thank you Mr. Kent!
  • I found this video, I cooked it once, and now I make it more often than I can count. Thank you for this and all your other recipes and I hope you all have a wonderful day
  • @slkgeothermal
It's the annual chili cookoff/trunk or treat at church this weekend so I felt I needed to review your classic chili recipe before starting up my entry to the competition. Love you guys and I am always happy to see a "new" video.
  • I followed your instructions ( on the stovetop) my kids love it! I am now the champion this week. Thank you Kent!!!!
