    When you hit round two in that pan I was like... Whats he going to deglaze that with? Hope he doesn't leave that flavor behind. Then I saw that coconut milk in the lower left of the video. As soon as you dumped it in and started scrapping... Like Pavlov's Dog, my tastebuds lit up. I've never been so jealous of coconut milk in my life. I saw it change color and I could taste all that goodness through the screen! Tell Mom this is another dish she could use one of those mailbox zucchinis in :). PEEAAAAAAACCCCE! You know what... WAIT! Can we talk nutrition for a bit. Yes, this dish may be higher in fat from the coconut but this dish is also LOADED with iron, calcium, vitamin C, B vitamins, magnesium, and those chickpeas have 39 grams of protein per cup. We haven't even touched on the value of the turmeric and ginger! Microbiome... The American Gut Study suggests eating more than 30 different types of plant foods a week for a healthy / diverse microbiome. All ingredients in (including spices) this dish contained 15!     i'm not a vegan...yet, but this recipie was great: it smelled wonderful while cooking, tasted great and as promised, left me feeling good. No heartburn. No indegestion. I'm seriously considering going in this direction with my cooking. My diet was already very healthy, but this is another level. There could be some answers here for me. Kudos, Chef Andrew.

    I made this tonight, but I put my own spin on it. I used kale and spinach. I also added chopped up cherry tomatoes (yummy). I used organic curry powder because it has the turmeric in it of course. It was delicious. Thank you!!

    I’m neither vegan nor vegetarian, but was interested in eating more healthy, more often with an emphasis on anti inflammatory foods. THIS DID make me feel great! My head was swimming with endorphins and my body felt tingly all over for like an hour after I ate it…and oh by the way…it was delicious!!! Thanks man for creating this!!!

Anti-inflammatory ingredients seem to sit best with me at the moment while I'm re-learning that my body can tolerate and thrive on. I'll be trying this tomorrow and I can't wait!

    Tried the recipe and it was perfect man.....i added some fresh lime juice and zest to it, definitely compliments the coconut while adding acidity which is what i thought it lacked in the first place. I also used a bit of cumin (just a pinch) to bring more boldness in to the picture. I highly suggest adding those two ingredients when you make this for yourself again
  • This is cooking for the future. I've been eating anti-inflammatory foods for a while and it's been so helpful for my distressed liver. More doctors need to admit this but sadly they don't. I feel so much lighter and brighter mentally eating this way.

  • My pre-made rice was brown rice with a variety of Indic spices and portobello mushrooms, and I swapped coconut milk for coconut cream. Cabbage was on sale so that was my greens. This was delicious and made enough to pack into single serving containers. Thanks.

    first video i see of yours and i gotta say... i really like the going in straight for it, no commentary overlapping with the cooking or anything, it felt peaceful and very satisfying to watch. oh and of course it looks absolutely delicious! only downside for me is that my partner has the pallet of a kid so i know i'd be making this for one haha
