Here is the easiest and fastest lemon cream to make! The Posset lemon! A delicious lemon cream without eggs, without starch and without flour. 3 ingredients only! All you need is whipping cream, lemon and sugar. The acidity of the lemon will naturally thicken the boiled cream. A refreshing dessert! An English recipe. Originally it was a drink made from hot milk curdled with beer, wine or other alcoholic liquors and usually flavored with spices, drunk as a delicacy or as a remedy for colds. Good tasting !

Ingredients :
Juice and zest of 1 lemon
60g of sugar
300ml whipping cream

1 - The sugar can be replaced by maple syrup or coconut sugar for example.

    2ème essai, toujours aussi bon, en ce qui me concerne j'ai réduit le sucre à 50 gr et augmenté la dose de jus à 1 citron + 1/2, Recette delicieuse, approuvée par mes invités.

    I love making many recipes from the Meyer Lemons I grow in my backyard. Each season, I harvest over 150 huge lemons from one tree, squeezing and freezing most of them in 6 oz. containers, mailing many to a friend in Texas [I live in California] and baking lemon glazed cookies, lemon brownies and my favorite, lemon curd. My friend in Texas is a Meyer Lemon aficionado and he taught me some important techniques. The most important thing I've learned is to always use heat proof, non-metal bowls [such as Pyrex], baking dishes and non-metal whisks, spoons, etc. while preparing recipes. Metal has an adverse effect with the acidity of the lemons. 😊🍋

    So I have tried it twice in the past few weeks. The first time it didn't work, the cream stayed liquid, even after 2 days in the fridge (it still tasted good) and I figured it was because all the cream that's available in my standard supermarket has been treated to last longer. I then went to search for standard oldfashioned cream and finally found it an organic super market. That time it worked really well and the cream set as expected. I absolutely love this cream and I will make it again very soon. Thanks for the recipe!
