Recipe :

Kadhai Paneer
Preparation time: 30 minutes
Cooking time: 20 minutes
Serves: 4

Ingredients:

For the Chop masala:
6 tbsp oil
1 tsp cumin seeds
1 cup chopped onions
1 cup chopped tomatoes
1 tbsp chopped ginger
1 tbsp chopped garlic
For the kadhai masala:
1tsp black pepper corns
2tsp coriander seeds
1tsp jeera
4 dried red chilies
1tsp kasoori methi

Method:
Heat oil in a pan. add the cumin seeds and allow to splutter. Add chopped onions and saute over low heat till golden. Add the chopped ginger and garlic and saute for 2-3 minutes. Add the chopped onions and 1 tsp salt and saute till the tomatoes are soft and well cooked.

For the tomato puree:
½ kg tomatoes
½ tsp salt
1 tsp sugar
Method:
Roughly chop the tomatoes. Cook the tomatoes, covered, with the salt and sugar till the tomatoes are well cooked and mushy.

For the kadhai masala:
1tsp black pepper corns
2tsp coriander seeds
1tsp jeera
4 dried red chilies
1tsp kasoori methi
Method:
Dry roast all the spices till fragrant and lightly coloured. Grind to a coarse powder.

For the Kadhai paneer:
250g paneer
1 cup chop masala
1 cup tomato puree
1 capsicum
1tsp chopped ginger
1tbsp ginger garlic paste
1 tsp chopped green chilies
Salt to taste
1tbsp oil
3 tsp kadhai masala
1tsp turmeric powder
1 tsp garam masala powder
Method:
Take 1 cup chop masala in a pan. add 1 tbsp ginger garlic paste and saute till the raw smell disappears. Add the turmeric powder and the red chili powder, salt to taste and sauté well. Add the kadhai masala and then the tomato puree, cook till the oil comes on the surface. Add the paneer cubes, water if required, and cook for 4-5 minutes. Add capsicum triangles, tomato triangles and onion triangles, and cook for 2 minutes. Serve.
