Collapse 20 scaffolding structures - Call your camel/horse and ride to the nearby viewpoint (located north-east of the excavation site) to force the scaffolding to re-spawn and then rinse and repeat this until you've collapsed 20 scaffolds.
Also, make sure when you are exiting the area, wait for the autosave symbol to appear in the bottom right before restarting your load file.
