God!!! Why can't all other cooking videos be that professional, accurate, and to the point. I just finished watching a lamb video where the chef spent over 2mns explaining how to chop celery...Give me a break....Thank you Guys...

For an already Frenched Rack of Lamb: 1) Trim the Fat 2) Brush with olive oil 3) Rub on fresh herbs such as thyme, parsley, garlic 4) Salt and pepper to taste 5) Optional: Marinating 6) Add oil to a pan and sear on medium high heat on each side for two minutes until the lamb is brown all over 7) place lamb on roasting pan and put it in to a preheat over at 425 degree farenheit 8) FOR MEDIUM RARE; in oven for 8 - 12 minutes, internal temperature should be 145 degrees farenheit(you might want to cook a few minutes more if you dont want it so raw) 9) After taking it out of the oven, let it rest for at least five minutes DUNZO

145 degrees is a crime. Life's too short to eat grey meat.

Right!!! I've been on youtube almost all day looking at rack of lamb recipes. Gotten so frustrated that I decided to use butt rub seasoning and old bay, then sautated/seared it in onions, carrots and celery. Next I baked it in toaster oven for about 25-30 mins on 400 degrees. NOw I come across this video! I'll try this simple recipe next time.

This is a good video. Another good video is rack of lamb with pistachio herb crust by foodwishes, but the recipe is a little more complex because of the addition of nuts on the outside.

I have made this dish using New Zealand lamb and it was stunning! Together with a beautiful glass of New Zealand white wine.
  • You know me... saw a $29 1/2 rack of lamb on the menu.. fantastic.. but now I gotta make it at home too... will do! 2 1/2 lb racks at MHB Vons are between $12.99 and $16.99 per lb...

So whats the difference between american lamb and regular lamb?
  • Wouldn't the garlic or herbs burn if you sear with them rubbed on?

I can't believe he left all those good juices in the pan! At least pour it over, that's lost flavour.
