Paitan Chicken Ramen
Ingredients

For the Chicken Broth (Makes 6 to 8 servings)
4 to 5 lb organic/cage free whole chicken
3 lb chicken feet
1 lb chicken back bones
1 cup sake
25 cups cold water

For the Tare (Makes 6 to 8 servings)
1 oz kombu, dried kelp
1 bulb garlic, cut in half
2 oz ginger, sliced
1 large leek, cut in half, wash it through, prepare only white part
4 dried shiitake mushrooms
1 cup sake
3 cups cold water
2 Tbsp sea salt
2 Tbsp sugar
4 to 8 Tbsp gochugaru, Korean red pepper flakes (optional)

For the Chicken Meatballs
2 remaining chicken breast, removed skin
2 Tbsp unsalted butter, cut it into small pea size
1 clove garlic, grated
1 tsp ginger, grated
1 Tbsp cornstarch
1 Tbsp soy sauce
1 Tbsp mirin
2 Tbsp ground sesame seeds
1 egg
1/8 tsp black pepper

For the Crispy Chicken Chashu
2 remaining chicken thighs and leg meat with skin on
1/4 tsp salt
1/8 tsp pepper

For the Ramen Bowl (Makes 2 bowls with below ingrecietns)
10 oz napa cabbage, cut into bite size
2 portions of fresh, frozen (5 oz each) or dried (3 oz each) ramen noodles
2 to 4 cloves garlic, grated
4 green onions, chopped
4 Tbsp ground sesame seeds

    I made this. It was time consuming, but it was worth it. The family and I loved it. I made a lot of the broth and froze quite a bit. I've made it 3 times. Not so long of a process when you already have the broth. MMMMMMM GOOD!!

    I made the chicken broth the day before and put it in the fridge overnight. In the morning, it was jello... as in pure gelatin. Liquid gold. Your one-way ticket to healthy-town. Gelatin reduces joint and bone pain, increases brain function, and helps reduce the signs of skin aging. I'm making this broth every Sunday for the rest of my life. Thank you, Seonkyoung!

You know, i have been making your one pot korean ribs for a little over a yr now and it is my family’s fav!!!     OK, I NEVER DO THIS... HOWEVER: Seonkyoung, I stumbled upon your channel when I was searching for “the best pad Thai recipe”. I decided to try yours and was BLOWN AWAY with how delicious and perfect it came out. I then subscribed and browsed through your videos and I have to say, your video production has come a long way. I absolutely love the camera angles and your jokes that you have now. I watched your pork bun video and laughed so hard about over stuffing the buns like JEGGINGS!!! Bahahahahaa! At the end of that video you mentioned you had merch, and I was like, “what kind of merch?” I was absolutely tickled to see the nooder girl!!! And that you drew her!!!! Needless to say, I bought a shirt and can’t wait to wear it. Here’s the thing, I never do this. Commenting on YouTube videos. It’s just not my thing. But I felt compelled to reach out and tell you my experience and let you know I think you’re pretty awesome and even though some people can be lame, (people are people wherever you go) I admire that you’re not letting that stop you.
