An omelette can hardly get any better than this homey, comforting mushroom omelette. Cheesy, mushroom-y and simply delicious.

Ingredients:
1 yellow onion (medium, peeled and chopped)
2 cups thinly sliced cremini mushrooms
2 Tbsp butter
1/2 cup white wine
1/2 cup heavy cream
Salt and pepper (to taste)
A pinch of fresh chopped dill (or other herbs)

3 eggs (lightly beaten)
1 cremini mushroom (thinly sliced)
A pinch of fresh chopped dill (or other herbs)
1/2 cup shredded Jack or Cheddar cheese
Salt and pepper (to taste)

Fresh chopped dill (or other herbs)
Fresh thinly sliced green onion
Thinly sliced chili pepper (optional)

    I just made this! It was good, very rich! Don’t try to eat this everyday. I substituted the white wine for chicken stock and white vinegar. Came out great!

    Ok, I’ve watched this a few days ago. Still thinking about it. I got good organic eggs 🥚, heavy organic cream, shrooms, getting the jack cheese (love how little goes a long way❤️ for a change). This is more than a recipe. It’s about a mood, with music, with calming joy...the video itself is beautiful. The copper colored pan W/ matching burner ...the lighting even...all clear, beautiful. The cook is great, but equally great is the presentation itself. It got i the folds of my consciousness. 😂🤣😂😇

    Important notice: do not add salt and pepper while you still have runny egg on top, cuz when you try to disperse it afterwards it gonna take all the salt with it and you gonna end up with overly salted bits, best is adding the seasoning near the end of cooking process or while beating the egg
