1) Chicken Parmesan Next Level, with oozing melted cheese on top!
One of the best chicken Parmesan recipes you will taste. The chicken is crispy on the outside with a herb Parmesan crust and it’s juicy in the middle. It has a buttery flavour and topped with freshly creamy mozzarella cheese, it’s hard to beat. The sauce is made from scratch and fresh tomato pieces are added for freshness. (2) Italian stuffed peppers with cheese and herbs. Italian style Stuffed peppers with beef and cheese with Italian flavours. These Italian peppers make a perfect lunch or even dinner and are ideal prepared in advance. These Italian peppers have a meat filling made from beef, Parmesan cheese, herbs and brown rice. The peppers are first roasted to soften the flesh and bring out the pepper flavours. Simple fresh flavours are combined into the mix resulting in a delicious Italian style meal. Ensure you select even sided large peppers or capsicums when buying. Leaving the stems on gives it a more rustic appealing look, but that’s entirely optional. A serve of two halves per person is perfect but you can also serve half with a nice salad. Enjoy my Italian peppers.

(3) Croque Monsieur, French Cheese and Ham sandwich. Croque Monsieur, a very popular bistro snack in France and for good reason! The French word “croque” meaning “to crunch” and “Monsieur” meaning “Mister” has been a common bar and cafe style meal that originated back in 1910. Most of the cafes today in Paris still have them on the menu and are commonly know just as a “Croque”.
It’s an addictive sandwich and rightly so, due to the crispy crunchy bread, hot ham and the golden melted cheese. In the video I used raclette cheese. Some make it without the Bechamel, but for a few extra minutes it’s well worth the effort. Serve it with a well-seasoned crisp green salad.

(4) Amazing Gratin Dauphinois - potatoes in cream with cheese
A classic French potato recipe with the addition of cheese.
Gratin Dauphinois is a classic French potato dish that you will find in many bistro restaurants in France. Traditionally there's no cheese and instead, knobs of butter are added to the top helping the potato starch mixed with the cream render that brown gratin look and flavour. So you can leave the cheese out if you're a purist, but I think it takes it up a notch. It's such luscious velvety potato dish making it irresistible and difficult not to go for seconds.

Saganaki is basically a Greek cheese that’s been pan fried. It has a gorgeous crispy crust on the outside and it’s soft melted cheese on the inside. It’s topped with a squeeze of lemon to cut through the richness. It makes the perfect appetizer to start any meal. This version is flambeed with brandy which is not traditional but adds another layer of flavour. Serve it with black kalamata olives, a crisp salad and crusty bread for an amazing experience.

(6) Cheese & Meat Ravioli Recipe, the best homemade ravioli ever!
Italian ravioli, a delicious dish filled with various ingredients like meat, cheese, and veggies, typically features a filling of ground beef, Parmesan cheese, and eggs wrapped in thin pasta dough, served with tomato or meat sauce. This version uses veal and mortadella for enhanced flavors, with ravioli filling benefiting from slight over-seasoning. Pasta making, though not difficult, requires a pasta machine or rolling pin. Thinner dough yields better ravioli, with the filling visible for added allure, akin to sexy lingerie – a thin veil but not too revealing!
Using all-purpose or plain flour simplifies this recipe, although Italian 00 flour is traditionally recommended. The recipe calls for one egg per 100 grams of flour, plus an extra egg yolk for richness and color. Knead the dough for 5 minutes until smooth like playdough. Dust with flour if too sticky and cover with cling film when not in use. Regardless of your preference, ravioli is a satisfying dish sure to leave you wanting more!

    The best thing about Chef Joel's recipes - other than the exquisitely delicious recipes themselves of course - is that he gets right down to business. No excess talking, no explanations, no tedious 'fillers' that take up space in the videos. His are some of the very best cooking videos I have seen on Youtube (and trust me I've seen many).
