Flourless Chocolate Cake (pan size 38 x 26 cm or 15 x 10 in)
1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml

120g dark chocolate (1 cup)
30g unsalted butter (2 tbsp)
30ml milk (2 tbsp)

4 egg whites
a pinch of salt
50g sugar (4 tbsp)
4 egg yolks
1 tsp vanilla extract (5ml)

Bake at 170C for about 20 minutes

Chocolate Cream Filling
150g dak chocolate (1 cup + 2 tbsp chopped chocolate)
90g heavy cream (1/3 cup)
300g cold heavy cream (1 1/4 cup)
30g sugar (2.5 tbsp)

Cocoa Syrup
75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g)
2 tbsp sugar (25g)
Mix to dissolve and let it cool down completely

Chocolate Glaze
50g cocoa powder (1/2 cup)
115g sugar (1/2 cup + 1 tbsp)
85ml water (1/3 cup)
85g heavy cream (1/3 cup)
1 tbsp gelatine powder (9g)
3 tbsp cold water to bloom gelatine (45ml)

(pan size 38 x 26 cm or 15 x 10 in) 1 cup = 240ml; 1 tbsp = 15ml; 1 tsp = 5ml

 Cocoa Syrup:
 75ml hot water (1/3 cup)
1 tbsp cocoa powder (7g) 2 tbsp sugar (25g) > Mix to dissolve and let it cool down completely 

Flourless Cake:
 120g dark chocolate (1 cup) 30g unsalted butter (2 tbsp) 
> Melt over 70°- 80°C hot water > Add 30ml milk (2 tbsp) and stir 4 egg whites a pinch of salt > Whip
 > Add 50g sugar (4 tbsp) gradually
 4 egg yolks 1 tsp vanilla extract (5ml) > Whip then fold into the chocolate mixture

> Fold 1/3 of the egg white mixture into the chocolate mixture, then fold the chocolate mixture into the rest of the egg whites mixture
 > Line a pan with baking sheet and spread out the dough 
> Bake at 170°C for about 20 minutes, let it cool down 
 Chocolate Cream Filling:
 150g dark chocolate (1 cup + 2 tbsp chopped chocolate)
 90g heavy cream (1/3 cup)
 > Melt over hot water
 300g cold heavy cream (1 1/4 cup)
 30g sugar (2.5 tbsp) 
> Whip 

> Add 1/3 of whipped cream to the chocolate, then add everything to the whipped cream

 > Trim the edges of the cake, cut into 3 pieces 
> Apply cocoa sirup
 > Pipe the chocolate cream and flat it out (3 layers) 
> Let it cool in the fridge for 3 hours 
 Chocolate Glaze: 

1 tbsp gelatine powder (9g) > Add 3 tbsp cold water (45ml) to bloom gelatine 
50g cocoa powder (1/2 cup)
 115g sugar (1/2 cup + 1 tbsp)
 > Add into saucepan and mix 85ml water (1/3 cup) 85g heavy cream (1/3 cup)
 > Add to the saucepan, mix and boil, let it cool down for a few minutes > Add bloomed gelatine and stir 
> Sift it through a fine mesh strainer
 > Let it cool for 1,5 - 2 hours
 > Sift it through a fine mesh strainer again, stir really carefully 


> Trim the edges of the cake 
> Pour the chocolate glaze
 > Cut into 7 slices 
> Optional: Decorate with edible gold

    I just made this cake and dropped some slices off my friends and the amount of complements I got from this cake was astronomical!! “It’s the best cake I’ve ever had”, “taste like an authentic restaurant chocolate mousse cake”, “very impressed”, “it just melts in the mouth” The directions were very easy to follow and it turned out lovely. Keep in mind this cake definitely takes awhile to make, but it’s 100% worth it! However, the cake is quite small and we had a lot of extra frosting, so I definitely recommend making two cakes at a time (more for you)! Overall: 10/10, one to be written down in the recipe books!

  • Been a chef for 37 years, never seen a cake recipe such as this, will be making this with my daughters this coming weekend. I'll say this, the pandemic has allowed my daughters and I to cook more than in the past. I just published a cookbook "Cooking with the Girls". Tons of non-bake recipes my daughters and I have made during our nearly 5 month lock down here in the Philippines.
