haddock fillet 1.2kg
salt 2g / 1/4 teaspoon
black pepper 1g / 1/8teaspoon
all purpose flour 70g / 1/2cup
oil for frying
all purpose flour 150g / 1cup
corn starch 75g / 1/2cup
baking powder 4g / 1 teaspoon
salt 2g / 1/4 teaspoon
baking soda 1g / 1/4 teaspoon
chili powder 1g / 1/4 teaspoon
white vinegar 2g / 1/4 teaspoon
garlic 2g / 1 clove
salt 1g / 1/8teaspoon
sour cream 50g / 1/4 cup
milk 15g / 1 tablespoon

    I wanted to comment since I come again and again to this recipe. I have made this for fish and also for chicken and not only it has never failed me, it’s the most consistent recipe I have tried that no matter what the results are always amazing. There has not been a time when I have made this recipe and my guests haven’t finish the whole batch, whatever it is. I wanted to thank you a lot, lot. You did an amazing job in here!

    I used to work at fish & chips shop in Scotland & their Fish batter main secret is 100 gram rice flour & 100 gram plain flour mixture with 70 ml Cold Vodka & 110 ml Cold Dark Ale/Beer in to Fish batter mixture with 1 spoon honey & little salt... keep it in to fridge for 30 mins. Take out from fridge. take cod/haddock fish , dry it out & dip in to dry plain flour, then dip in to fish batter mix & fry it on 360 degree •F. .     I made this tonight with flounder, and my husband and I could not get over how crunchy and delicious it was! Thank you for the CLEAR instructions (let the batter drip off for about 5 seconds...) Came out perfect!

    What a wonderful recipe !!! I made it just as written, except, instead of water and vinegar, I made mine with a light beer and OMG, delicious, I had 6 dinner guests and they absolutely loved it!!!! The fish was super crispy and delicious!!!
