Strawberry and rhubarb turnovers are a delightful alternative to traditional pies, offering a portable and individual-sized treat. These turnovers combine the sweet, juicy flavour of strawberries with the tartness of rhubarb encased in a flaky, buttery pastry. The process typically involves chopping fresh strawberries and rhubarb, then cooking them slightly with sugar (and sometimes a bit of lemon juice or zest) to create a thick, jam-like filling. This mixture is then spooned onto dough circles or squares, which are folded over and sealed. Brushed with egg white and a dusting of caster sugar.

Baking the turnovers produces a golden, crispy exterior with a warm, aromatic filling. They're often enjoyed as desserts or sweet snacks and can be served either warm or at room temperature. Optionally, they can be dusted with powdered sugar, glazed, or served with a scoop of ice cream or a dollop of whipped cream for extra indulgence.

Ingredients: the filling makes 7-8 turnovers

Ready-made puff pastry
3 cups (300g) Rhubarb sliced
3 cups (360g) Strawberries halved
1 ¼ cups sugar (220g)
¼ cup cornflour/cornstarch (40g) Editing error see note:
½ tsp cinnamon
¼ tsp salt
1 tbsp lemon juice
Egg white for the wash
Sprinkle sugar

NOTE: Cornflour/cornstarch was added when all the fluid was released while cooking. You can see it was added before stirring at 05:02. Sorry for the editing error!

    They look very yummy. I actually made a Rhubarb crumble yesterday ,I roasted the rhubarb in 3 inch chunks for 15 mins in a heather honey & ginger mix ,I removed the ginger pieces once roasted . It added a nice tickle of flavour to the rhubarb. Simply delicious....😋

    My mother grew rhubarb and mint in her small garden! My father's garden was behind the shed, and he grew lettuce, tomatoes, and carrots, and I know at the second garden, because they sold their house, started to grow grapes! I miss them!     My Mom used to make strawberry rhubarb pie. We had strawberries and rhubarb growing in our backyard. She served it with real whipped cream! There was no Cool Whip back then. It was delicious .     I usually save all my rhubarb for wine, preferring apples or raspberries for this sort of thing. I was never a big fan of strawberry rhubarb pie, scones etc. This looks so good now I have to make it...thanks Rik.
