Yes, I love butter! And it's not as unhealthy as refined vegetable(seed) oils. Indeed an interesting, unique and super delicious mashed potato recipe. Wish I could reach out to my laptop screen for tasting it! Whisky wasn't sure of the potatoes and cabbage but surely loves the bacon😊. Have a lovely evening Chef❤❤.

Great recipe. My Mom, long gone sadly, was a fabulous cook. One holiday meal I offered that I'd make Colcannon. She'd never had it, but from that day on, she brought it up in every food conversation we had. Mine wasn't as refined as this, but I'm certainly going to give your recipe a go.
