3lb boneless short ribs
1 onion
1 celery stalk
2 carrots
1 parsnip
8 oz cremini mushrooms
2lb yukon gold potatoes
5 garlic cloves

Sachet d'Épices:
stems from 1/4 of a bunch of parsley
3 strings thyme
3 strings rosemary
2 bay leaves
2 cloves
black peppercorns

1 cup flour
1 tsp butter
olive oil
1 tbsp tomato paste
2 cups dry red wine
4 cups beef stock
