Holiday Baking | Persimmon Bread | Vlogmas Day 6

Persimmon Bread recipe;
-3 cups sugar
-4 eggs
-1 cup canola oil (or any neutral oil)
-1 teaspoon ground cinnamon
-1 teaspoon ground nutmeg
-1 1/2 teaspoons salt
-1 cup persimmon pulp (about 2 persimmons)
-2/3 cup water
-2 teaspoons baking soda
-3 cups flour
-1 cup chopped walnuts
Mix together the first 6 ingredients. Add persimmon pulp and water. Gradually mix in flour, and baking soda. Fold in walnuts. My mom used to bake hers in a one pound coffee can, but I bake mine in the mini loaf pans that have been sprayed with cooking spray and dusted with flour. Bake in a preheated 350 degree oven for 50 minutes. Turn out onto cooling rack. Simply the BEST! Shelby

I've made this recipe twice and I find the cook time way too short if you are using 2 large loaf pans. (It makes the right amount for that, but you need to bake for at least 65-70 minutes. Because persimmons get sweeter as they get more ripe, you may find the sugar excessive... and I think it makes the breads scorch easily. I put a tin foil hat on the bread for about half the baking time so they look more attractive. It's a very dense bread, almost like a fruit cake. Tasty, but be prepared for a long baking and cooling time. This is not a project to start after 8pm or so... as you'll be going for some hours. Very holiday bread.

That was such a wonderful memory of your mother's. What a joyous memory. It sounds decadent. I bake thu out the year, but love to bake the special things around the holidays. Brings out those dear to our hearts memories. I lost my parent's year's ago. I cherish all of their memories.Thank you for sharing that special moment of yours.:)
