Pumpkin Pie

Serving: 6-8
Difficulty: Medium
Baking time: 50 minutes
Prep time: 15 minutes

Dough for the pie,
2 cups all-purpose flour, 250 g
1/3 cup sunflower oil or any oil works great, 80 g
2 tablespoons plain yogurt, 80 g
A pinch of sugar
A pinch of salt
1 teaspoon baking powder
1/2 teaspoon mahalep cherry, ground

Dough for the pie and poğaça;
6 cups all purpose flour
1 cup sunflower oil
8 tablespoons plain yogurt
1 teaspoon sugar
1 teaspoon salt
2 packs baking powder (20 g)
1/2 teaspoon mahalep

For the filling;
300-350 g pumpkin, peeled and grated
2 eggs
1 pack %18 fat cream
2 onions, sliced
2 tablespoons olive oil
1 pinch sugar
1 sprig of rosemary
1 pinch salt
1 pinch black pepper

• For the pie, mix the pie dough ingredients in a large bowl and knead them until they all are combined and not sticky.
• Roll it out on a piece of baking paper with a rolling pin to a size slightly larger than the bottom of the air fryer tank, place it in the air fryer, press the middle with your hand and raise the edges. Then, poke holes with a fork for blind baking, place another piece of baking paper on the dough top, add the legumes that will weigh them down, and bake in the air fryer for 10-15 minutes at 200 C (390 F) degrees with a high air. If you don’t have an air fryer, you can blind bake it in a fan oven at 180 C (355 F) degrees for 25-30 minutes.
• Take out the legumes and baking paper and give another 5 minutes at 200 C (390 F) degrees.
• Rub the onions with a pinch of salt, caramelize them in a large pan with them olive oil and sugar.
• Mix the eggs, cream, salt and pepper in a beaker.
• Place the pumpkins and onions on the dough. Pour the mixture, place some rosemary leaves and air fry 22 minutes at 200 C (390 F) degrees. If you don’t have an air fryer you can bake in an oven at 200 C (390 F) degrees 30-35 minutes. Enjoy!
• To make the poğaça, rest of the dough makes 12 poğaça, divide the dough into equal balls. Roll out and fill- or plain- with desired filling (cheese, minced meat, potato) fold in half and press the edges. Brush with egg yolk and sprinkle nigella and sesame. Bake in air fryer at 180 C (355 F) for 8 minutes.

    Refika is right on her notion of Quiche. Pie is usually a pastry dough with sweet or savory or savory ingredients. In the USA pumpkin pie is sweet (a sweet pastry or pie). Whereas quiche is a pastry dough that contains egg and/or milk and other savory or sweet ingredients (anyone can correct me if I’m wrong; I’m not a professional cook). With all these said this quiche looks amazingly delicious. I must try making it!

    From Colorado, USA: wow this is delicious! I have R A and cannot roll and kneed dough, but this dough-I think is perfect. It it so crunchy and delicious. There is no other bread better for soup. This is love. The pie was delicious- I didn’t trust my air fryer, so used my oven . I so enjoy all your recipes, but especially appreciate the vegetarian spin almost all you recipes can take.     Always a pleasure to watch Refika & Team! Can you confirm/correct the amount of oil in the written recipes? They ask for 1 cup of oil for both dough amounts, even though one is for 3x the flour.
