  • Watching this makes me want to go to the store to get ingredients instantly, Erin has an amazing effect of turning a boring Saturday into a "hmm maybe I will bake a cake" kinda of day. The only thing is, I'm not a fan of dessicated coconut, does anyone know what effect this will have on the cake in terms of moisture?

  • You are so awesome! Love the energy and personality you bring to baking! Thank you! I do have a tip for you, to prevent separation of the condensed milk frosting.....use cold condensed milk. This is the ONLY buttercream frosting I like so I make it quite a bit and it never separates if I used the condensed milk straight from the fridge.

    Lmao, you are somehow one of my number 1 baking resources these days. I just made a toasty spiced toasted coconut and toasted almond flour whipped cream frosting/mousse using your peanut butter whipped frosting recipe as a base. I def have to make a sheet cake to pair with it! Thanks!

  • You, My Dear Baking Guardian Angel, taught me how to make the most perfect puff pastry ever. I make a few batches a week just so I can make wonderful things for my friends and family. Croissants, palmiers, kouign amman, tarts, galettes, all manner of wonderful dishes that have blessed my life. I have so much to thank you for and the greatest way I know how to show thanks is to cook for someone. I obviously cannot do that but know that my next batch of perfect Erin McDowell croissants is in honor of you.

    Hey Erin! Love all your videos and recipe books…especially, “The Book on Pie”…so beautiful and creative…when I steal a few quiet moments in my day…I look and marvel at your book on pie. …My mother is celebrating a momentous birthday in early December (she doesn’t want any of friends to know her true age…so I can’t divulge it here!😂) ..in Vancouver BC…I live in Ottawa, Ontario …and will have no kitchen to speak of in which to bake ….so I plan to make a sheet cake, freeze it …and bring it with me … with frosting and decorative bits in tow to Vancouver. She, like your parents, doesn’t care for overly sweet frosting….f loves carrot cake ..and I love vanilla cake …so I will also bake both as you did …and somehow assemble her’s using half carrot and half white!!! I am super excited!!! I love this video…because you think of everything…right down to making your own cinnamon and vanilla sprinkles. …Love your energy, gurl!!….You are so uplifting and inspirational!
