I recently did a composite mod on a Japanese one of these. The boards should be pretty similar, if not identical - try adjusting the horizontal frequency POT internally.

Looks like major convergence issues, or IC failure and I've seen this happen with just extremely old components causing split screens, can't help you tho sorries :( looks really cool tho and also there's drift issues that can happen with the thing too, I forget it's name tho

Do you have another device and set of cables to test to make sure it is the TV and not some weird compatibility thing with the n64, or a bad cable? With it being so old I imagine it is the TV, but probably worth a shot before you start breaking stuff down. Also, that thing is awesome, and excellent video!
