Black Forest Cake

This delicious black forest cake features luscious chocolate cake layers soaked in a cherry brandy syrup with lots of cherris in between and it's all covered in whipped cream and shaved chocolate. It's a light and perfectly sweet German dessert that is easy to make and a chocolate-lover's dream!

  • I'm from Germany and just made a blackforest cake Schwarzwälderkirschtorte last weekend! We make it only a little different: cakes here are rather the 8inch 2 layer version and actually we bake one cake and cut it in2 or 3 layers. I didnt use fresh cherrys because you only have them a very short time in the year, we use sour cherrys in a glass and bring it to a boil with the juice and the starch, the kirsch comes in after the boiling. (And you can keep a little bit juice from the cherrys instead of water for the syrup.) And you said, the whipped cream will not be stable without the whole cherrys: in Germany we use a powder to stabalize cream, its made of one part powdered sugar and one part starch to put in to the cream before whipping (1 teaspoon per 200g cream). This way my cake was firm even 2 days later.

    Baked this day before yesterday for my mom's 1st birthday in Heaven (31st July). She was a baker and her grandchildren looked forward to every birthdays with her cake. This year I had to bake without her supervision (I am not into baking). This cake comes out really good and my niece and nephews devoured it! God bless you all.
