The Best Tiramisu Recipe

Tiramisu is one of the greatest desserts in the world and it's easy to see why after you try it.

Equipment (as seen in the video):
- Winco 13x9 cake pan
- Mercer Culinary M18730 Millennia® 4" x 2 1/2" Square Edge Turner
- drip coffee maker (pour-over preferred)
- 2 large mixing bowls
- silicone spatula
- icing spatula
- grater

Ingredients - 8x8
Coffee Soaking Liquid
- 330g filtered water
- 33g ground coffee
- 33g sugar (adjust depending on strength of coffee)
- 10-15mL (2-3 tsp) coffee liquor (optional)
Zabaglione (Tiramisu Cream)
- 5 large egg yolks
- 125g white sugar
- 340g mascarpone
- 180g (3/4 cup) heavy cream
- 5mL (1 tsp) vanilla extract
- 1 small pinch of fine salt
Assembly
- approx. 24 lady fingers
- unsweetened cocoa powder for dusting
- dark chocolate (50-70% cacao) for grating

Ingredients - 9x9
Coffee Soaking Liquid
- 410g filtered water
- 41g ground coffee
- 41g sugar (adjust depending on strength of coffee)
- 15mL (1 tbsp) coffee liquor (optional)
Zabaglione (Tiramisu Cream)
- 6 large egg yolks
- 165g white sugar
- 453g (1 lb) mascarpone
- 240g (1 cup) heavy cream
- 6mL (1 tsp) vanilla extract
- 1 small pinch of fine salt
Assembly
- approx. 30 lady fingers
- unsweetened cocoa powder for dusting
- dark chocolate (50-70% cacao) for grating

Ingredients - 13x9
Coffee Soaking Liquid
- 600g filtered water
- 60g ground coffee
- 60g sugar (adjust depending on strength of coffee)
- 15-30mL (1-2 tbsp) coffee liquor (optional)
Zabaglione (Tiramisu Cream)
- 10 large egg yolks
- 250g (1 cup + 5 tbsp) white sugar
- 680g (1lb 8oz) mascarpone
- 360g (1 1/2 cup) heavy cream
- 10mL (2 tsp) vanilla extract
- 2 small pinches of fine salt
Assembly
- approx. 44 lady fingers
- unsweetened cocoa powder for dusting
- dark chocolate (50-70% cacao) for grating
