**** Ground Beef Pasta Bake ****



1 lb Penne
1 Medium Onion - chopped
1 1/2 lb Ground Beef
1 Tbsp Olive Oil
2 - 3 Cloves Garlic - minced
3 C Marinara Sauce
Salt & Pepper to taste
2 C Cheddar Cheese - shredded


Boil pasta - cook for 9 - 10 minutes. Pasta should be slightly underdone.

Add oil to ovenproof skillet. Cook until beef starts browning, drain excess fat. Add onions & garlic cooking until onion start to turn translucent. Add in marinara sauce and season with salt & pepper. Cook until sauce is heated through.

Pour ground beef mixture over pasta and mix well.

Spray 13 x 9 baking dish with cooking spray. Add ground beef mixture to baking dish and top with cheddar cheese.

Bake @ 400 for 10 - 15 minutes or until cheese is nice & bubbly.



***** Ground Chicken Meatloaf ****



2 lbs Ground Chicken
1 C Seasoned Breadcrumbs
2 Eggs
1 Medium Carrot - grated
1 Medium Onion - Chopped
4 - 5 Cloves Garlic - minced
1/2 C Ketchup
1 Tbsp Worcestershire Sauce
1 tsp Celery Salt
1/2 tsp Salt
1/2 tsp Pepper
1/4 C Fresh Parsley - chopped


Mix the chicken & breadcrumbs in a medium sized bowl while you prepare the remaining ingredients.

Add in carrots, onions, garlic, eggs, worcestershire sauce, celery salt, salt, pepper & parsley. Mix
well.

Place on a baking sheet lined with parchment paper. Shape onto pan.

Cover and bake @ 350 for 1 hour. Uncover and cook for an additional 15 - 30 minutes or until internal
temperature reaches 160.



***** Chicken Baked Ziti *****



2 lbs Boneless Chicken Breasts - cut into 1" cubes
1 lb Pasta
Olive Oil
1 tsp Oregano
1 tsp Garlic Powder
1/2 tsp Basil
1 tsp Salt
1/2 tsp Pepper
32 oz Marinara Sauce
2 C Ricotta Cheese
3/4 C Parmesan - grated
1 ll Block Mozzarella - shredded

Boil pasta and remove 3 minutes early so the pasta doesn't overcook. Drain, return to pot and set aside.

While pasta is cooking. Stir until chicken is cooked through. Remove from heat.

In pot with pasta add about 1 C of shredded mozzarella, parmesan cheese & chicken. Stir until
combined. Stir in the marinara sauce & mix well.

Pour into 9 x 13 baking dish. Top with ricotta cheese. Fold cheese into pasta. Top with remaining
mozzarella.

Bake @ 400 for 20 - 25 minutes
